The Marinade Where Flavor Actually Lives

This is where it starts

Two tablespoons soy sauce regular, not dark soy

Dark soy too heavy for this

Two cloves garlic grate it fine, let it melt to paste

One tablespoon ginger same, grate till it’s almost liquid

One teaspoon rice vinegar tenderizes, wakes everything up

One teaspoon cornstarch just a little

Helps the chicken brown

Gives the glaze something to grab onto

Get your hands in there

Mix it proper

Now walk away

Twenty minutes minimum

Two hours in fridge?

Even better

Cornstarch needs time to hydrate

Don’t add extra salt

Soy sauce is already doing the work

First time I made this I salted the chicken before the marinade

Nearly blew my head off

The Glaze Read This Twice

Small pot

Medium heat

Three tablespoons honey real honey yeah?

Not that fake syrup in the bear bottle

The flavor matters here

Two tablespoons soy sauce

One tablespoon rice vinegar

Pinch of red pepper flakes  optional

Not to make it hot

Just to make it interesting

Bring to gentle bubble

Now listen  don’t stir like crazy

Start looking thick

It keeps thickening as it cools

Searing the Chicken Hot Pan, Single Layer

Heavy skillet

Cast iron if you have

Stainless works

Get it hot

Oil in  vegetable, canola, peanut

Not olive oil

Smokes too low

Tastes wrong here

Oil shimmers?

Not smoking

Just shimmering

Lay chicken in

Single layer

Don’t crowd

Dump it all in?

You’re steaming

Not searing

Steamed chicken is sad chicken

Work in batches if your pan is small

Now  leave it alone

I know you want to stir

Don’t

Two to three minutes

Edges go golden

Pieces release easy from the pan?

Another two to three minutes

You’re chasing color

Not just cooked-through

Cornstarch gives a light crust

Not deep-fried crispy

But textured

That’s what you want

Glazing Time  Move Fast

Chicken’s done?

Pour that glaze over

Toss quick while pan is still hot

Heat makes it even stickier

Now turn fire off

Drizzle one teaspoon sesame oil

Toss again

Off the heat yeah?

Cook that sesame oil and you wasted good money

Whole point is that nutty finish at the end

Rice  Don’t Overthink It

Jasmine or basmati

Rinse till water runs mostly clear

Not just washing

Removing starch so grains stay separate

Cook in water

Broth if you have

About one cup per person

Fluff with fork when done

Not spoon

Spoon mashes it

Veg  Keep It Raw, Keep It Simple

You’re already cooking chicken

Making glaze

Don’t stress yourself roasting vegetables

My rotation:

Purple cabbage shredded thin, crunchy for days

Carrots  grated, sweet against salty chicken

Cucumber  seeded and sliced, refreshing

Scoop the seeds though

Or your bowl gets watery

Snap peas  want something warm?

Same pan after chicken comes out

Salmon sear skin-side down, glaze at end

Shrimp  two minutes, don’t walk away

Tofu  press it proper, needs more oil for crust

Brown rice  more fiber, takes longer, plan for it

Roasted sweet potato  winter move, cut small, hot oven twenty-five minutes

Sriracha in glaze  if you want heat

Gochujang  Korean-ish direction, very good
