Put your dry zucchini for baking sheet. One layer. No overlapping. If dem dey touch each other, dem go steam instead of roast. So spread am well. Brush small oil. Just small. Make e no stick.

But wait – no put sauce.

I know you want to put sauce. I know. But no. Bake am empty first. 5 to 7 minutes. Just zucchini and oil.

Why? Because even after salt and pressing, water still dey inside. The heat push am out. If you put sauce now, the water go trap under the sauce and spoil everything. Your cheese go float. Your bite go be soup. Nobody wants soup.

So bake am empty. Let am sweat for oven.

When e come out, e go look smaller. The edges go start to brown. Now you fit put sauce.

But use thick sauce o. If your sauce dey run like water, forget am. Mix tomato paste with small water and olive oil. Make e thick like eba. Just small spoon per slice. Half teaspoon. No drown am.

Then oregano. Or any dry leaf wey you get. Thyme. Basil. Anything.

Then cheese. I like mozzarella and Parmesan mix. The Parmesan get sharpness. E cut the blandness of the zucchini. If you only get mozzarella, e go still work. But Parmesan make am better.

Then pepperoni. Or sausage. Or suya. Or anything. If you no get meat, use bell pepper and onion. Cut am small-small. No put big chunk. This one na bite, not salad.

Back to oven. 8 to 10 minutes. Cheese go melt. E go bubble. The smell go make your neighbour knock your door.

Then broiler. One minute. Maybe two. But watch am.

Do not walk away. Do not answer phone. Do not greet visitor. I lose one tray because my cousin came that time. When I come back, e don black. Charcoal. Burnt. My heart break. My staff eat am and lie to my face say e still sweet. E no sweet. E was rubbish.

When e come out golden, bubbly, the edges brown small-small – bring am down.

Serve immediately.

Leftover? Store for fridge. Two days. Reheat under broiler. Not microwave. Microwave go turn am to rubber. Broiler go bring back the crisp.

Substitutions? If you no get mozzarella, use cheddar. If you no get pepperoni, use smoked turkey. If you no eat meat, use mushroom. If you no eat cheese, use garlic oil and herbs. E no be pizza again but e still sweet. We adapt. Na Nigeria we dey.

The two things you cannot change:
