My Protein Ice Cream

look i’m gonna be honest with you. when i first got that dash my mug thing i thought it was stupid. my wife bought it. i was like what is this a toy? we have a freezer.

then i tried making protein ice cream in it and yeah… first batch was nasty. like really bad. watery. lumpy. tasted like chalk. i almost threw the machine away.

but i’m stubborn and i kept seeing people online making it look easy so i kept trying. after like ten fails i finally figured it out.

so here’s the deal

the mug has to be COLD

not kinda cold. not “i put it in this morning” cold. a full 24 hours. and don’t open the freezer every hour to check it. just put it in there and leave it alone.

also your freezer needs to be actually cold. most people’s freezers are set to like 10 or 15 degrees. that’s not cold enough. you want 0 or lower. i didn’t know that until i bought a little thermometer for five bucks. fixed that and suddenly my ice cream stopped being soup.

ingredients. nothing fancy.

half a cup of unsweetened almond milk. not the sweetened kind. regular milk works too. oat milk works. just no sugar added.

quarter cup of heavy cream. this is what makes it creamy. if you don’t eat dairy use coconut cream. the thick kind from a can. not the watery carton stuff.

one scoop of protein powder. vanilla. about 30 grams. whey is best but plant based is fine. just don’t use those mass gainer powders. those have thickeners and your ice cream turns into glue. i learned that the hard way.

two tablespoons of regular sugar. yeah i know it’s sugar. but it’s less than normal ice cream. you can use honey or maple syrup instead. if you do use a little less almond milk because liquid sweeteners make it thinner.

half a teaspoon of vanilla extract. not a big deal if you don’t have it.

and a pinch of salt. don’t skip this. trust me. salt kills that weird aftertaste protein powder has.

how i mix it

i use a measuring cup with a spout because i spill everything.

pour the almond milk in. add the sugar. whisk until the sugar disappears. takes about a minute. you shouldn’t see grains anymore.

then add the protein powder. this is where people mess up. if you just stir lazy you get lumps. and lumps taste like chalk. so whisk hard. i use a fork sometimes and just smash the lumps against the side of the cup. keep going until it’s smooth like thin pancake batter.

then add the cream, the vanilla, and the salt. stir again. the mixture gets thicker. if it looks separated like little fat blobs floating, your cream was too cold. don’t worry. just stir gentle and keep going.

the machine part

pull your frozen mug out of the freezer. it should feel painfully cold. like hurts your hand. if it doesn’t put it back for another hour. don’t rush this. i’ve rushed it and regretted it every time.

attach the motor to the lid. click the paddle into the motor base. then lock the lid onto the mug. line up the little pins and twist clockwise until it clicks.

plug it in and turn it on. the paddle starts spinning. now pour your mixture through the little chute on top. SLOWLY. if you pour fast it splashes everywhere and now you’re cleaning protein goo off your counter. ask me how i know.

if you want add ins like chocolate chips

only add them during the last 5 minutes. i’m serious. if you add them at the beginning the paddle just smashes them into dust. you’ll end up with chocolate powder instead of chunks.

just drop them through the chute one small handful at a time. don’t go crazy. like two tablespoons max.

how long to run it

about 15 to 20 minutes. i check at 15 minutes. the ice cream should look like soft serve. like it holds its shape on a spoon. if it’s still runny give it another 3 to 5 minutes. don’t walk away and forget about it. i’ve done that and came back to frozen butter.

when it’s done

turn it off. twist the lid counterclockwise to unlock. i just eat it right out of the mug because that’s the whole point. if you’re sharing scoop it into a bowl. but why would you share? it’s one serving.

ok now what goes wrong because stuff goes wrong

if it comes out icy instead of creamy – your mug wasn’t cold enough or your ingredients were room temp. next time put the almond milk and cream in the fridge overnight too.

if it tastes chalky – you didn’t mix the protein powder enough. next time mix the powder with the almond milk BEFORE adding the cream. the cream coats the powder and makes it harder to dissolve. also a blender fixes this instantly.

if the mug overflowed – you overfilled. i know the recipe says half a cup milk and quarter cup cream. don’t add extra just because. even two extra tablespoons will push liquid out the top. i’ve done this more times than i want to admit.

if your chocolate chips sank to the bottom – you added them too early or dumped them all at once. add them slow during the last 5 minutes.

storing leftovers

honestly just eat it right away. that’s when it’s best. but if you have leftovers which you probably won’t, scrape it into a small container and stick it in the freezer. it’ll keep about a week. after that ice crystals take over and it gets weird.

to serve from frozen, leave it on the counter for 8 to 10 minutes. don’t microwave it. please. i saw someone microwave ice cream once and i still have nightmares.

one warning – if you added fresh fruit like banana or strawberries, don’t freeze the leftovers. that fruit turns into brown mush. eat that batch immediately.

the one pro thing i learned

ok here’s something i figured out after making this like fifty times. if you really want dense creamy ice cream, not just good for protein ice cream but actually good, chill the whole liquid mixture in the freezer for 15 minutes before you pour it into the machine. just pop the measuring cup in the freezer.

it shaves off 5 minutes of churning and the texture gets noticeably thicker. i do this when i’m making it for someone else like a client who paid for dessert. for myself? nah i’m too impatient. but if you try it once you’ll see what i mean.

last thing

don’t overthink this. it’s a tiny ice cream maker not a spaceship. the only real rule is freeze the mug for a full day. everything else is flexible. too sweet? cut the sugar. too plain? add cinnamon or cocoa powder. want it fruity? blend frozen berries into the base before churning.
