You know wetin dey always baffle me for this kitchen life? How person go buy big turkey wey cost plenty money, spend hours dey pray over am as e dey cook, then when e come out dry like old shoe, instead of salvage am, dem go just pack am for fridge and forget am until e start to smell.

Next week, na so so dustbin go swallow that meat wey cost thousands.

But me? I no be that kind person. When I see leftover turkey, I no see waste. I see my chance to show you say I sabi work.

Make I tell you one thing wey happen to me wey teach me this lesson proper.

I bin get this catering job for a wedding for Aba. Big wedding. The bride mama – God bless her soul, she try – she want cook the turkey herself because she no trust anybody for that kitchen. She say na her special recipe wey her own mama teach her, the one wey don dey pass from generation to generation. I tell am “Mama, no wahala, I go support you.”

Okay, na so she cook am.

The thing come out so dry, even the dog for backyard sniff am, turn around, and walk away. She come meet me, tears dey roll down her face, voice dey shake, she say “Chef, wetin I go do now? My daughter wedding dey tomorrow and I don spoil the main meat for the reception. The whole family go disgrace me.”

I look the turkey, I look her face, I just laugh small. No be to mock am. Na because I don see this kind thing before. I say “Mama, no worry at all. Make we just turn this one to something else wey go make people forget the original turkey ever exist.”

I shred everything with my hand. Raid her pantry – find canned soup, box stuffing wey she buy for backup, frozen vegetables wey dey for her freezer. I mix am, layer am, bake am for that same oven wey bin dry the turkey.

The next day? The guests no even ask about the original turkey. Dem just dey gather round the casserole, dey scoop, dey ask “Wetin be this one wey sweet so? Make I get the recipe before I go.” The bride mama come hug me, she say “Chef, you don save my life today.”

That day I remember say cooking na about thinking on your feet. You no be master if you no fit turn disaster to blessing.

So let me show you exactly wetin I do that day, step by step. No fancy talk. Just real kitchen work.

First thing first. Before you do anything else, preheat your oven to 190°C. I know say you go wan rush to start cutting and mixing, but make the oven dey hot before the food enter. If you put am for cold oven, the heat go rise slow-slow and your casserole go take too long. The top go dry out while the inside still dey raw. So set am first and let am heat up proper.

Now check your oven. If e get fan wey dey blow air around, reduce the heat to 180°C. That fan dey blow hot air wey fit burn your top before the inside cook. Many people no know this one, I don save plenty catering events with this knowledge.

Now the dish. Take your 9×13 baking tray – the one wey fit hold food for about 6 to 8 people. Grease am. I use butter, because butter get flavor. But if you dey watch your waist, use cooking spray. No big deal. Just make sure the tray greased so the food no stick.

Now let me talk about this turkey wey you get.

If you dey use leftover wey you cook already, that one na the easiest. You don already do the hard work. But if you dey buy fresh meat just to make this casserole? I go advise you one thing wey go save your life.

Buy chicken thighs instead of turkey breast.

Yes, I say am. You fit wonder “But Chef, the recipe name na turkey casserole.” I know. But listen. Chicken thigh get more fat. Fat na flavor and moisture. Turkey breast get no fat, e go dry for oven. If you must use turkey, buy the dark meat – the leg and thigh part. Dark meat get more fat to protect itself. The breast na for people wey like to suffer.

Now, shred your meat. And I beg you, use your hands.

When you use knife to chop, the meat dey cut too small and disappear for the sauce. You go scoop casserole, chop chop, you no go see meat. Na empty spoon dey pain person. When you use your hand, you go tear am into chunky strips. When person scoop, dem go see real meat and know say you no dey stingy.

If your turkey already dry like sawdust, no panic. The sauce go bring am back to life. Just shred am well well and believe in the process.

Now the stuffing.

Ehn, this one na where plenty people dey spoil everything. I don see am happen many times. Person go pour wet stuffing on top of casserole, bake am, and the whole thing turn to one soggy, mushy mess wey resemble something wey baby eat and bring out. The top no crisp, the inside no set, and the person just stand for kitchen dey wonder where dem go wrong.

So hear me.

If your leftover stuffing still wet, forget am. Throw am away or give your dog. Instead, make fresh stuffing from box. I use Stove Top plenty. Follow the package but reduce the water by quarter cup. The bread need to remain dry small to absorb the sauce from the casserole. If you add all the water the package dey ask, the stuffing go be wet before e even enter oven, and that one na death.

If you must use your leftover stuffing, spread am on a baking sheet and put for oven at 160°C for 10 minutes. Stir am halfway. This go dry am out. But honestly, fresh stuffing dey better. The flavor dey stronger because nobody don cook am before.

Now the sauce.

This na the heart of the matter. The sauce na wetin go carry the whole dish. If the sauce no good, the whole thing no good.

Some people go tell you to make roux – melt butter, add flour, whisk for ten minutes until your hand dey pain you. Who get time for that when you dey cook for family and your children dey cry for kitchen? I use canned cream of chicken soup. Campbell’s. The regular one.

But hear me well – do not add water.

The tin go say add one can of water. That one na lie. Instead, add half a cup of milk – full cream, not the skinny one wey taste like water – and half a cup of sour cream or plain yogurt. The milk dey thin am, the sour cream dey give am thickness and that small sour taste wey cut through all the heaviness.

Now season this sauce. This na where many people dey fall my hand. Dem go just pour the soup and think say e go be enough. No. You need to season am.

Add one teaspoon garlic powder. Not fresh garlic – fresh go burn for oven. One teaspoon onion powder. Half teaspoon dried thyme. Half teaspoon dried sage if you get. Pinch of black pepper. Pinch of cayenne pepper – small-small o, just to wake am up, no make am spicy.

And here is my secret wey I don use for years and years. Add one teaspoon of Dijon mustard.

I know you dey look me like say I don mad. Mustard for Thanksgiving casserole? Yes. The mustard cut through all the richness and make the turkey taste like you spend hours dey season am. I learn this one from an American chef wey I work with for Lagos many years ago. The man say “Chef, if you want your creamy dishes to shine, add mustard.” Since then, I don dey add am to plenty things and e never fail me.

Mix this sauce with your shredded turkey and one and a half cups of frozen mixed vegetables. You know the ones – peas, carrots, corn, green beans wey dey mix together for bag. No need to thaw the vegetables. Just pour am inside. The oven go handle am.

Look at the consistency. If the sauce too thick, add a splash of chicken stock. If e too watery, add more sour cream. You want am to look like thick stew, not soup wey dey run for plate.

Now the layering. This one na where I fit save your life.

I don see many people just mix everything together for one bowl – turkey, sauce, stuffing – then pour am for tray. Wetin go happen? The bottom go burn before the top brown. The sauce go bubble and make everything turn to glue. Na disaster.

Instead, do am like this.

Spread half of your stuffing on the bottom of the greased tray. Pack am down with the back of your spoon. Make am flat. This bottom layer go absorb all the juices from the turkey as e dey bake and become soft and flavorful, almost like bread pudding.

Pour all your turkey and sauce mixture on top. Spread am evenly. Make sure the sauce reach everywhere – even the corners. If the corners dry, the stuffing for there go burn and turn to charcoal.

Then cover with the remaining stuffing. This top layer go crisp up and give you that golden brown crunch. When you bring the casserole to the table, this top layer na wetin everybody go see first. If e dey golden and crispy, people go start salivating before you even put am down.

Now the baking.

Cover the tray with foil. I repeat – cover am with foil. If you no cover am, the top go brown fast and the inside go still dey cold. The heat need to trap inside to cook the center. So cover am, put for oven, and bake for 25 minutes.

After 25 minutes, remove the foil.

Now, take real butter. Not margarine. Margarine get water. Water go release steam and make your top soggy. Use real butter. Cut small pieces and dot am all over the top of the stuffing. Put am back for oven, no cover, and bake for another 10 to 15 minutes.

How you go know when e don ready? The top go turn golden brown. The edges go dey bubble with the sauce. The butter go dey sizzle for the stuffing. And the smell go fill your whole house and make everybody abandon wetin dem dey do to come stand for kitchen ask “when we go chop?”

Now the hardest part – the resting.

I know say you don work for this kitchen, you tired, you hungry. The smell don dey torture you. Your children dey whine. Your husband dey circle the kitchen like shark wey smell blood. But you must – must – leave this casserole to rest for 10 minutes.

If you cut am immediately, the sauce go run everywhere. Your plate go resemble flooded road. The layers no go hold together. The stuffing go slide off the spoon. Na pure mess.

But if you wait ten minutes? The starches and fat go cool down small and set. When you cut am, e go hold its shape. You go get clean portions wey show all the layers. The sauce go still dey hot but e no go run for your plate like flood.

Use that ten minutes to set the table, pour your drinks, or just sit down small. You don work enough for this kitchen.

Let me tell you wetin I do when I dey cook for many people.

When I get event for 50 or 100 people, I no get time to measure anything with cup and spoon. I go buy the big food service cans of cream of chicken – the ones wey dey feed army. I pour am into the biggest bowl wey I get. Add milk and sour cream, but I dey guess. I dey use my eye and my hand to know when the consistency dey right.

I season am heavy because those big cans dey always under-seasoned. The factory dey fear salt. So I add my garlic powder, onion powder, thyme, pepper, and that mustard wey I tell you about. Then I mix with my hands – with gloves o, I no dey barbaric.

For the stuffing, I make the boxed version but reduce the water by 20%. Then I just scoop into disposable aluminum trays. Same layering. Same butter on top. Same baking time.

Nobody ever knows I take shortcut. The seasoning and the butter dey do the heavy lifting. And the most important thing – the food dey taste like I spend hours for kitchen.

If you no get turkey, rotisserie chicken from Shoprite or Chicken Republic dey work perfectly. Actually, sometimes I prefer am because the chicken get more natural fat and the meat dey moist. Just shred the whole chicken – skin and all. The skin add flavor.

If you hate cream of chicken, cream of mushroom dey work. The earthy flavor dey fit well with the turkey and vegetables.

If you want sweet twist, spoon small drops of whole berry cranberry sauce between the layers. The sweet-tartness dey cut through the richness. I do this one for Christmas sometimes and people dey always talk about am.
