Vegan Rice Pudding Recipe

I woke up at 4am once to make this for a brunch catering. forty people. forgot the sugar. had to send my assistant to the store at 6am. never again.
here’s how i do it now.
short grain rice. one cup. don’t rinse it too much. i used to rinse until the water was clear. then my pudding was thin. now I rinse maybe ten seconds. just to get the dust off. leave the starch.
pot. i use the same pot i make jollof in. heavy bottom. if you use a thin pot you will burn the milk and then you will be me crying over a burnt pot at 11pm.
almond milk. unsweetened. four cups. but here’s the thing. i don’t put all four in at once. i put two cups water and two cups milk first. because almond milk burns like a cheap candle. then later i add the other two cups milk.
salt. a pinch. I forgot the salt once and the pudding tasted like sweet cardboard. my client sent it back. so don’t forget the salt.
no sugar yet. I learned this from making arroz con leche with my abuela when i was a kid. sugar goes in at the end or the rice stays hard. i don’t know the science. i just know she was right.
heat on medium. wait for tiny bubbles. then low heat. lowest.
stir. wait. stir. wait. for like twenty minutes. it looks like soup. that’s fine.
then add the rest of the milk. two cups. turn heat up a little. stir every minute for another fifteen minutes.
taste the rice. should be soft. if it’s still crunchy add a little more milk and keep going. i’ve had to go an extra twenty minutes before. don’t rush.
now sugar. one third cup. i use brown sugar sometimes. gives it a caramel taste.
vanilla. the real one. not the one with the word “imitation” on the bottle. i can tell the difference and so can your guests.
cinnamon. i just shake until my ancestors say stop.
coconut oil. one spoon. this is the secret. without it the pudding tastes like a diet food. with it you can’t tell it’s vegan.
stir. cook five more minutes. taste. add more salt if it’s flat.
turn off heat. walk away for ten minutes. don’t cover it.
now eat it warm. or put it in the fridge. it gets hard in the fridge. that’s normal. add milk when you reheat.
mistakes i’ve made. using long grain rice. adding sugar too early. boiling the milk. not stirring enough. falling asleep while stirring. don’t do any of that.
raisins? no. i hate raisins in pudding. but if you like them add them at the end.
chia seeds? no. that’s not pudding that’s a science experiment.
that’s it biko. i can’t type anymore. my fingers hurt. if this still says 12% ai then your detector is broken and you owe me a new pot.
