honestly I hate how every recipe online makes this seem fancy

it’s not fancy

it’s just dinner

but here’s the thing most recipes are written by people who dont actually cook for crowds they cook for instagram

me? i cook for people who are hungry and dont care if the pepper is perfectly round

so first mistake everyone makes

they stuff raw peppers

like they just cut the top off, throw raw meat and raw rice inside, and bake

and then wonder why the pepper is still crunchy and the filling is dry

no no no

you gotta parboil the peppers

big pot, salted water, boiling hard

cut your peppers first. tops off. seeds out. those white rib things? pull them out too. but keep the good parts from the tops, chop em up, we use that later.

now drop the peppers in the water

three minutes exactly

use a timer cause if you walk away you’ll forget and then they’ll be mush and you’ll be pissed

i did that once. was talking on the phone. peppers boiled for like ten minutes. came out looking like sad wrinkled socks. had to throw them away and start over. my assistant was laughing at me.

so three minutes. pull them out. turn them upside down on a towel. let them drain.

while they drain, make the filling

pan on medium high. little oil. ground meat. i use half beef half italian sausage. the sausage fat keeps everything moist. also sausage has flavor already so you dont need to add a bunch of dried herbs that taste like dust.

put the meat in the pan. now leave it alone. dont stir. let it get brown and crispy on the bottom. that takes like two minutes. then stir it up and let it brown more. you want brown bits stuck to the pan. that’s called fond. french people have a word for everything. but basically its just burned flavor that tastes good.

take the meat out. leave the fat in the pan. throw in one chopped onion and those chopped pepper tops from earlier. cook till soft, maybe four minutes. then add three garlic cloves. crush them first with the flat of your knife. chop em rough. cook one minute.

if the garlic burns? like smells sharp and bad? start over. you cant fix burnt garlic. i tried once. added honey. added cream. even added a little sugar. nope. still tasted like regret.

ok so now rice. use leftover rice from the fridge. if you cook fresh rice it turns into glue inside the pepper. i made that mistake for a wedding of 80 people. the filling was so sticky people were picking it out with their fingers. embarassing.

you need about two cups cooked rice for six peppers

mix everything in a big bowl: meat, onion garlic stuff, rice, and one cup shredded cheese

shred your own cheese biko. i know you’re tired but the bagged stuff has sawdust. ok not sawdust but cellulose. same texture. it wont melt right.

add one can plain tomato sauce. not pasta sauce. just plain. the cheap one.

season: one teaspoon salt, half teaspoon black pepper, one teaspoon paprika. smoked if you have it.

now taste it

yes taste it raw the meat is already cooked

if it tastes boring add more salt

i cant tell you how many times ive forgotten to taste and ended up with bland peppers and everyone is like “its nice” but they mean “its bland”

stuff the peppers. but dont pack them tight. leave space at the top. rice expands.

pour the rest of the tomato sauce over them. top with more cheese.

cover with foil. bake at 375 for 25 minutes. then take foil off. bake another 15 minutes.

want crispy cheese? broil for two minutes at the end. but watch it. i burned a whole tray once cause i went to pee. came back and the cheese was black. my dog wouldnt even eat it.

when they come out? let them rest ten minutes. i know you’re hungry. but if you cut them now the filling will fall apart and all the juice runs out. just wait.

what goes wrong

water at the bottom? you didnt drain the peppers after boiling. or you used fresh tomatoes.

filling dry? too much rice. or you left the foil off.

pepper crunchy? you skipped the three minute boil. no shortcut.

cheese burnt but filling cold? your oven runs hot. lower to 350.

for a crowd of 20? thats about 30 peppers. use two pans. boil peppers in batches. double everything except salt. start with one and a half times salt and taste.

make ahead? yes. assemble but dont bake. cover with foil. fridge one day. bake at 375 for 35 covered then 15 uncovered. add ten minutes cause starting cold.

dont freeze raw peppers. freeze after baking.

cheap trick: replace half the meat with cooked lentils. nobody notices. i do it for school lunches.

serve with simple salad. lemon juice. not garlic bread.

look. this is not gourmet. this is food that makes people quiet and happy. thats what matters.
